Seasoned Shrimp and Creamed Corn
Seasoning mixture: 1 tsp each ground coriander, garlic powder, paprika, chili powder, onion powder and 1/2 tsp black pepper
1 lb large shrimp
2 leeks, whites and light green part only, finely diced
1 large shallot finely diced
5 ears of corn
1 tsp butter
salt to taste
Grate 3 of the ears of corn and cut the kernels off of 2 ears of corn.
Blend all the ingredients for seasoning mixture. Sprinkle shrimp with salt and then very liberally with the seasoning mixture. Set aside.
Saute the leeks and shallot in a little bit of olive oil on low heat making sure to only soften, not brown. After a minute or two add the corn and sauté for 5 minutes more until corn is heated through. (Note: If you want the texture to be creamier then grate all the corn but you will probably need more than 5 ears because the grated corn yields very little). Salt the mixture and add a few pats of butter.
Sear the shrimp on high heat for 3-4 minutes on the first side and a minute on the second side.
